addressing distored/clippy 32 float (tascam x6)

Hi all!

I'm completely new to recording, but the idea of 32 float has intrigued me enough to get a Tascam x6 and start experimenting. I'm currently researching all I can to start understanding how this all works, but have a question as it relates to "recovering" audio that extends past the workspace (specifically in adobe audition). I've seen several youtube videos now where the host has overly loud/distored 32 float audio, and is able to recover (and clean up) a lot of information that goes well above his workspace by adjusting the DB down (a good example would be this link at around the 5:24 mark:
). But when I do this to similarly distorted audio, everything just gets "flat-topped" as I adjust the DB, and nothing actually gets "recovered" (it just gets quieter). I know that's not a whole lot of information to go on, but what might I be able to do to fix my audio similarly? Much thanks in advance!
